<p>Het geheim van de ultieme crouton is de knoflookolie als basis. Neem hiervoor een flesje olijfolie en voeg daar ruim geperste knoflook aan toe. Laat dit bij voorkeur ­enkele dagen staan, zodat de knoflook­smaak goed in de olie trekt. Dit gaat sneller wanneer je de fles een paar keer in warm water zet. <p>Snijd het brood in kleine blokjes of driehoekjes en besprenkel deze met de olie. Meng goed door. Verdeel het brood over een met bakpapier beklede ovenschaal of bakplaat. <p>Schil de appels en verwijder het klokhuis met een appelboor. Omwikkel de appels met ontbijtspek en houdt deze met ­cocktailprikkers op zijn plaats. Bestrooi de appels in spek met wat (zoete) dry-rub. Plaats de appels indirect op de barbecue. De keteltemperatuur is ergens rond de 160°C. Lager mag ook, dan duurt het ­alleen wat langer.
